I do definitely understand the need to simplify - and also, paradoxically, the magpie tendency. I've thought about cutting down my collection to maybe 10 or so watches. I don't think I'll ever go below that or get rid of some of my favorites. Thankfully, wristwatches take relatively little space, care, and feeding.
The Omega 1511 is a beauty, I can see why you kept that one.
One reason that I started my web site is so that I can experience more watches without permanently owning them - I take them in, clean them up, enjoy them for a while, and then pass them on to someone else.
I can imagine being happy with just a few watches, though, or even a single one. Having more often feels like less and vice versa.
